Our Pastured Pork

 This past season we raised 6 yorkshire heritage pigs whose job was to root up some land for us in an area where we normally grow roots and alliums.  The pigs job this past season was to eat weeds and fescue and our plan is to rotate them to another of our growing areas next season for weed control.   The yorkshire breed of pigs, especially since they are raised on pasture, will not be as lean as those pigs raised in small stalls; however, they are incredibly flavorful.

**NOTE:  ALL OUR PORK PRODUCTS ARE UNCURED SO THE HAMS AND THE BACON WON'T HAVE THE SMOKED FLAVOR.  YOU CAN CREATE YOUR OWN BY ADDING A LITTLE MAPLE SYRUP WHEN COOKING THE BACON OR HAMS.

 

** SOLD OUT ** Pork Filets (Tenderloin) - These are the leanest and most tender pork cuts. Be careful to avoid overcooking any cut of pork from the loin.  Considered by many as the prime cut. Packaged in roughly 1# packages with no bones.

CHOPS BONELESS - These are great grilled, broiled, or pan-fried.  Without the bone these chops cook very quickly.  Packaged 2 per pack. They are roughly 3/4 inch thick with each package averaging 3/4#.

BOSTON BUTT BONE IN - This is from the front shoulder and has more fat marbled in the meat for added flavor requiring slower cooking.  These are incredible for barbaque style dishes.   These are packaged into 2-1/2 to 3# roasts. We love using these roasts for our version of  "Carolina Pulled Pork Barbeque"

WHOLE SIDEMEAT BONELESS - Also known as "Pork Belly".  Great for flavoring soups and stews.  Normally you find this meat as Bacon which is cured with salt and sugar.  We have smoked our own sidemeat an it is AMAZING. Packaged in 1.5 and 2 # slabs.

 NECK BONES - Pork neck bones are best prepared simmered in water for making a flavorful broth. After the broth/soup is made the bones make a great treat for your dogs! Great with beans and rice.

FAT BACK - The fat from the side and back of the pig.  Can be rendered in a dutch oven or slow cooker to make lard for excellent pie crusts or instead of cooking oils. (This is not the Leaf Lard.)

LEAF LARD - The highest grade lard and back of the pig comes from the visceral (or "soft") fat from around the kidneys and loin of the pig. It lacks any real pork or meaty flavor, making it an excellent neutral-flavored cooking fat with a high smoking point..  Can be rendered in a dutch oven or slow cooker to make lard for excellent pie crusts or instead of cooking oils.
