Tabouli  (4 servings)

1 cup bulgur wheat soaked

3 cups fresh parsley finely chopped

1 cup boiling water

1 Serrano or Jalapeno pepper finely chopped

1 cup diced cucumbers

1 cup diced tomatoes

1/2 white onion – finely chopped

1/2 green pepper finely chopped

1/4 teaspoon allspice

1/4 teaspoon cinnamon

1/2 cup lemon juice

1/3 cup olive oil

1 clove garlic – pressed

1 teaspoon honey

1/4 cup fresh mint – finely chopped

 

Directions

(1)  Mix together boiling water and bulgur wheat and let set for 1 hour (you may do this the night before)

(2)  Mix together bulgur wheat, parsley, mint, cucumbers, tomatoes, sweet green pepper and onion

(3)  Make a dressing with lemon juice, olive oil, cinnamon, allspice and garlic and honey and serrano

(4)  Mix dressing with salad.  Consider letting it set for 30 minutes for the flavors to blend!
