Napa Slaw Salad

Dressing:

- 1/2 cup well-shaken buttermilk

- 2 tablespoons mayonnaise

- 2 tablespoons cider vinegar

- 2 tablespoons minced shallot (or candy onion since it is so SWEET

- 1 tablespoon sugar or honey

- 3 tablespoons finely chopped chives

Slaw Salad:

- 1 pound Napa Cabbage – cored and thinly sliced crosswise (about 4 cups)

- 6 radishes – thinly sliced in strips

- 1 yellow bell pepper – thinly sliced in strips

- 1 red bell pepper – thinly sliced in strips

- 2 celery ribs – tinly sliced diagonally

(1) Whisk together buttermilk, mayonnaise, vinegar, shallot, sugar, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl until sugar has dissolved, then whisk in chives.

(2) Toss cabbage, radishes, and celery with dressing.
