Broccoli Raab with Lemon

 

Broccoli Raab, also known as Rapini, has an Italian origin and is a good source of iron and beta-carotene.  If you are unfamiliar with this vegetable, it looks similar to a small head of broccoli but has a wonderful spicy flavor similar to mustard greens.  

 

1 lb broccoli raab (rapini)

3 Tbsp. of olive oil

2 garlic cloves

salt & pepper for taste

1 juice of fresh lemon - optional

 

Clean and trim the stems from the broccoli raab.  Heat olive oil and sauté garlic briefly.  Add broccoli raab, salt & pepper then stir until just tender.  Place in serving dish and if desired, drizzle with lemon juice.  Serves 4 as a side dish.
